Palak paneer
High in nutrients:

INGREDIENTS:
- 2 bunches of fresh spinach (palak), washed
- 200g paneer, cut into cubes
- 2 tablespoons oil or ghee
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 green chilies, finely chopped
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- 1/4 cup heavy cream (optional)
- Fresh cilantro, chopped for garnishing
How do you make Palak paneer
Blanch and wash the fresh palak leaves & cook it in boiling water with a pinch of salt for 5 min.
Drain out the palak leaves & dip them into cold ice water. Doing this will retain the dark green colour of the spinach leaves.
Now take a blender add Roughly chopped Onions, Green Chilli, Garlic cloves, Cashew & the Spinach leaves. Make a thick smooth paste.
Next in a kadai heat butter/oil, add Jeera seeds, Kashmiri Red chilli powder, Kitchen King Masala, Coriander powder, Jeera Powder & Salt. Roast them all well together & allow it to cook for 5min.
Once done add the palak blended paste into it & mix it well. Also here we will add some fresh cream from @amul_india
Once it starts boiling add the paneer/cottage cheese cut in any shape you like. We cut it into a square. I have used Amul Paneer you can use alternative brands too. Cook for another 10min to allow the paneer to take the flavour of the masala.
Once it starts bubbling turn off the gas, top it with some fresh cream & serve hot with chapathi or roti or even it’s amazing with rice!!
